Garlic Butter & Truffle Mashed POtatoes
You know me and you know I love potatoes in any form, but mashed potatoes have a special place in my heart for obvious reasons: there is nothing that screams comfort food more than warm place of buttery mashed potatoes. These garlic butter and black truffle oil mashed potatoes in no exception to that.
They are creamy, garlicy, buttery and slightly cheesy, accompanied by that delicious truffle taste. They are ready in 30 minutes and they are the perfect side dish to any plate you are planning to cook for dinner. This recipe can easily be doubled or tripled if you are serving it to guest, and they are also delicious as leftovers!
Garlic Butter & Truffle Mashed Potatoes

- Boil the potatoes in salted water until they are tender (this takes around 20 minutes).
- While the potatoes are boiling, melt the vegan butter in a sauce pan. Once melted, sauté the garlic until it becomes fragrant, set aside.
- Drain the potatoes. Drain the melted butter, leaving the garlic bits behind (don't throw them away), and pour it into the potatoes, followed by the nutritional yeast, onion powder, truffle oil, non-dairy milk, salt and pepper to taste and mash using a potato masher.
- Once smooth transfer to a baking dish, top with extra truffle oil and broil until the top of the potatoes is golden brown (around 7 minutes at 500F).
- Top the potatoes with the garlic bits, dried parsley, and salt and pepper to taste.
