  1. Preheat the oven to 350F.
  2. Whisk together the lemon juice with the non-dairy milk, set aside for 10 minutes. Mix in all the dry ingredients.
  3. Pour in the milk mixture, herb and spices mix, and oil into the dry ingredients and mix vigorously until all the ingredients are mix together.
  4. Prepare a madeleine pan spraying cooking oil on top of it, pour 1-2 tbsp of the batter into each mold, or you can use a piping bag to help you.
  5. Bake for 10-15 minutes or until you can insert a toothpick on them and it comes out clean.
  6. Allow them to cool for 5-10 minutes before serving.
