- Remove the stems and seeds from the guajillo, ancho, and chipotle chiles.
- Heat a dry skillet over medium heat and lightly toast the chiles for 1-2 minutes on each side until fragrant, being careful not to burn them.
- After toasting, place the chiles in a bowl and cover them with hot water. Let them soak for 15-20 minutes, or until they become soft.
- In a pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
- Add the garlic and cook for another 1-2 minutes, until fragrant.
- Drain the soaked chiles and transfer them to a blender or food processor.
- Add the sautéed onions and garlic, the tomatoes (or canned tomatoes), apple cider vinegar, cumin, oregano, paprika, cinnamon, allspice, and bay leaves.
- Pour in 1 1/2 cups of vegetable broth and blend until smooth. You may need to add more broth to reach your desired consistency.
- Return the sauce to the pot. Bring it to a simmer over medium heat and let it cook for about 15-20 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- In a small bowl, mix the 1/4 cup vegan butter with the minced garlic.
- Spread this garlic butter mixture evenly on the inside of both sub buns.
- Heat a skillet or griddle over medium heat. Place the buttered sub buns on the skillet, cut side down, and toast until golden and crispy (about 2-3 minutes). Set the buns aside.

- On each toasted bun, layer 1 cup of shredded lettuce.
- Sprinkle the cubed tomatoes evenly over the steak tips.
- Add half of the cooked plant-based steak tips to each sub.
- Sprinkle 1/4 cup of vegan mozzarella on each sub. Option 1: Place the assembled subs under a broiler for 1-2 minutes until the mozzarella melts. Option 2: If you prefer, use a torch to broil the cheese.
