Instructions

Prepare the potatoes

  2. Toss the potato cubes with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Spread evenly on a baking sheet and roast for 25–30 minutes, flipping halfway, until golden and crispy.
  4. Set aside.
Chicken & sauce
  1. Cook the chickn according to instructions.
  2. In a small bowl, whisk together the Dijon mustard, brown mustard (if using), yellow mustard, maple syrup, vegan mayonnaise, apple cider vinegar or lemon, garlic powder, salt, and pepper until smooth. Adjust the seasoning to taste.
