- Whisk all the ingredients until you have a smooth milk and the cornstarch have dissolved.
- Transfer the mix to a medium size pan and cook in medium-low heat. Whisk constantly and cook until the mixture starts to thicken and a few bubbles appear. Do not wait until it’s boiling (that means the mix is over cooked).
- Pour the mixture in each ramekin and let it cool at room temperature for around an hour. Cover the ramekin with plastic wrap and transfer them to the refrigerator, allow them to cool overnight (or at least 8 hours).
- When you’re ready to serve, sprinkle 1 tbsp of sugar evenly on top of each one. Using a blowtorch caramelize the top, repeat the process with each ramekin. Allow it to cool for 2-3 min before serving.
