Instructions

  1. Warm up your milk slightly, you should be able to touch it without any discomfort. Add the yeast into the milk & whisk. Cover with a kitchen towel & allow it to rest for 10 minutes.
  2. The mixture should be “fluffy” at this point. Add the flaxseed egg, butter, sugar & whisk. If you have a stand mixer, I suggest you use it, you can do it by hand but it will just take a bit longer (& it will be a workout, of course!).
  3. Start adding the flour ½ cup at the time while mixing at low speed. Once all the flour has been added, allow the machine to knead the dough for 6 - 8 minutes, or 10 minutes if you are doing it by hand. You should have a smooth dough.
  4. Using your hands, turn the dough into a ball & transfer the dough to a large oiled bowl, cover the bowl with a kitchen towel & allow it to rise for 30 minutes.
  5. Punch the dough down after 30 minutes & knead with your hands for a minute or so. Place it back in the bowl, cover it & allow it to rise one more time for 45 minutes. At this point it should have doubled in size.
  6. Transfer the dough to a floured surface. Using a rolling pin turn the dough into a rectangle, about 1 CM thick.
  7. Mix the filling smashing the butter down to soften it, mix in the mixed garlic, parsley, nutritional yeast & pepper.
  8. Spread half of the mixture into the dough. Sprinkle the mozzarella cheese on top of the garlic butter mixture. Roll the dough up tightly into a log.
  9. Position the log seam-side down. Cut into 12 pieces with a sharp knife or piece of unflavored dental floss. Arrange the rolls in a baking dish. Loosely cover in plastic wrap & let rise at room temperature for 25 minutes. Meanwhile, arrange a rack in the middle of the oven & preheat the oven to 375°F.
  10. Uncover the rolls & bake them for 30-35 minutes or until golden brown. Take them out of the oven & spread the remaining butter mixture over them, allowing the butter to melt.
