  1. In a large pot heat up the oil, add the minced garlic & sauté until it’s golden.
  2. Add the wine & bring it to a boil.
  3. Once boiling, start adding the grated cheese 1/2 cup at the time, stir until melted. Repeat the process until you are done with all the cheese. Set the heat to medium high.
  4. Add the remaining ingredients except the tapicocca starch & water. Whisk until it’s fully combined.
  5. Add thr tapicocca mixed with the water & whisk vigorously, the sauce will start to thicken quickly. Keep an eye on it!
  6. Cook for 3-5 minutes or until the sauce is stretchy, transfer to a fondue bowl & keep it on low heat.
