Dough
- Mix all the ingredients together in a large bowl until you have a smooth dough. Cut in a half and allow it to rest for 30 minutes.
- Dust the dough with more flour and shape it into a rectangle and roll it in the pasta machine 2-3 times until your dough is thin. Repeat the process with the rest of the dough.
Filling
- Mix all the ingredients together, set aside.
Assemble
- Cut the pasta dough in squares. Drop 1 tbsp of the cheese mixture in the middle of the pasta sheet. Fold the dough to make a triangle.
- Press down around the filling to let out the air. Cut the triangoli with a pasta cutter to make the shape perfect.
Sauce
- Melt the butter in a medium size pan, one melted, add in the garlic. Once it becomes fragrant add the flour to make a thick roux.
- Pour the vegetable broth in, and whisk vigorously, add in the nutritional yeast, and vegan parm, followed by the milk. Whisk until it’s all mix in together.
- Top with fresh pepper and salt to taste.
Cook & serve
- Boil 4 cups on water in a pot, add plenty of salt and cook them until they float. Do not overcrowd them.
- In a deep pasta dish add in 1/2 cup of the sauce and serve the cooked triangoli on top. Top with more grated Parmesan cheese and fresh pepper.
