  1. Preheat the oven to 350F. Prepare a muffin tray by oiling it, set aside.
  2. Cream the butter and the sugars in a stand mixer. Add in the vanilla extract, followed by the crumbled biscoff cookies, then the vegan egg while continuously stirring. Add in the flour and baking powder.
  3. Fill each muffin cup evenly with the cookie mixture, creating a small dent with a spoon in each one, then bake for 20-25 minutes or until golden brown.
  4. Remove the smore cups from the oven and push top with 1/2 tbsp. of chocolate chips, press down the marshmallow into the smore cup, and top with an extra 1/2 tbsp. of chocolate chips. Repeat this process with the remaining cups.
  5. Bake the smore cups for an extra 2 minutes, then broil for 1 minutes or until the marshmallow looks golden.
  6. Remove form the heat and allow them to cool for 15 minutes before serving
