Vegan Madeleines
I have been wanting to make madeleines for so long but for some reason I thought they were going to be incredibly hard to make, but to my surprise they are fairy simple to make and they are so fluffy, soft and delicious. They are also easily customizable, you can easily add in some fruit extract to make them a different flavour, add in some food colouring into the batter or the white chocolate to make them the exact colour and taste you want.
You need a couple of ingredients that you might not have at home but they are easy to find, and if you cant find them at your locar groceery store you can always get them on amazon. First you will need some vegan white chocolate, as well as some food save glitter (but that last part is totally optional!)

- Preheat the oven to 350F.
- Whisk together the lemon juice with the non-dairy milk, set aside for 10 minutes. Mix in all the dry ingredients.
- Pour in the milk mixture, vanilla extract, and oil into the dry ingredients and mix vigorously until all the ingredients are mix together.
- Prepare a madeleine pan spraying cooking oil on top of it, pour 1-2 tbsp of the batter into each mold, or you can use a piping bag to help you.
- Bake for 10-15 minutes or until you can insert a toothpick on them and it comes out clean.
- Allow it to cool completely before coating them.
- Melt the white chocolate, pour 1-2 tbsp of the chocolate on each mold of a clean madeleine pan and press a madeleine down until the chocolate comes out of the sides.
- Repeat the process with the remaining madeleines.
- Place the tray in the freezer for 30 minutes or until the chocolate settles. They should come right off.
- Sprinkle with edible glitter if desired.
