  1. Whisk all the ingredients until you have a smooth milk & the cornstarch & tapioca starch have dissolved.
  2. Transfer the mix to a medium size pan & cook in medium-low heat. Whisk constantly & cook until the mixture starts to thicken & a few bubbles appear. Do not wait until it’s boiling (that means the mix is over cooked).
  3. Pour the mixture in each ramekin & let it cool at room temperature for around an hour. Cover the ramekin with plastic wrap & transfer them to the refrigerator, allow them to cool overnight (or at least 8 hours).
  4. When you’re ready to serve, sprinkle 1 tbsp of sugar evenly on top of each one. Using a blowtorch caramelize the top, repeat the process with each ramekin. Allow it to cook for 2-3 min before serving.
