For the filling
  1. Mix all the ingredients together until smooth. Set aside.
Make the dough
  1. Warm up the milk just a bit, it should feel warm to the touch.
  2. Mix the yeast & sugar with the milk, let it sit covered for 10 minutes.
  3. After 10 minutes it should look "fluffy". Start mixing the flour slowly, if you have a kitchen aid, set it at low speed until everything is mixed well. Add the remaining ingredients.
  4. After all the ingredients are incorporated, knead the dough for 8-10 minutes.
  5. Let the dough sit on an oiled bowl, cover it up and let it rest in a warm environment for an hour or so, after an hour has passed, check your dough, it should have doubled its size, punch it doing & knead the dough for 2 minutes. I like to let it rest for 10 more minutes before I roll it up.
  6. Dust a clean & dry surface, & start rolling your dough until it's around 1 inch thick.
Asamble your rolls
  1. Preheat your oven to 350F.
  2. Spread the filling into the dough evenly.
  3. Start rolling the dough, I like doing it from the top down.
  4. Once you have your dough all rolled up, start cutting the roll into your cinnamon rolls (around 1inch each), place them in an oiled 9x13-inch baking dish until you are done with the dough.
  5. Cover the rolls & let them rise for an extra 20 minutes (I like letting them rise on top of the stove to take advantage of the heat)
  6. Bake the rolls for 25-30 minutes, until golden brown.
  7. Enjoy!
