Instructions

  1. Prepare the buttermilk: In a small bowl, combine the non-dairy milk and white vinegar. Let it sit for 5-10 minutes until it curdles. This creates a vegan buttermilk substitute.
  2. Mix the wet ingredients: In a large mixing bowl, whisk together the melted vegan butter, sugar, vanilla extract, and the prepared buttermilk.
  3. Add the dry ingredients: Sift in the flour, baking powder, and salt. Gently fold the ingredients together until just combined. Avoid overmixing—some lumps are fine!
  4. Preheat your waffle iron and lightly grease it if needed.
  5. Cook the waffles: Pour batter into the waffle iron according to the manufacturer’s instructions and cook until golden brown and crispy.
Chicken
  1. Prepare the tofu: Freezing and thawing the tofu changes its texture, making it more “meaty.” Once thawed, squeeze out excess water and tear it into irregular chunks for a more realistic fried chicken texture.
  2. Make the buttermilk marinade: In a bowl, mix the non-dairy milk and white vinegar. Let it sit for 5-10 minutes to curdle. Then, whisk in the soy sauce, vegan chicken broth, and garlic powder.
  3. Marinate the tofu: Place the tofu chunks in the buttermilk mixture and let them soak for at least 30 minutes (or up to 2 hours for extra flavor).
  4. Prepare the dry coating: In a separate bowl, combine the flour, garlic powder, Italian seasoning, paprika, cayenne pepper, salt, and pepper.
  5. Coat the tofu: Remove each piece from the buttermilk, letting excess liquid drip off. Dredge it in the flour mixture, pressing gently to adhere. For extra crispiness, double dip—return the tofu to the buttermilk, then coat it again in the flour mixture.
  6. Fry the tofu: Heat about 1 inch of oil in a deep skillet over medium-high heat (around 350°F/175°C). Fry the tofu pieces in batches for about 3-4 minutes per side, or until golden brown and crispy. Transfer to a wire rack or paper towel-lined plate to drain excess oil.
  7. Serve & enjoy! Pair with dipping sauces like vegan ranch, BBQ, or hot sauce.
  8. Air Fryer Method (Oil-Free or Low-Oil Option)
  9. Preheat your air fryer to 400°F (200°C).
  10. Take each marinated tofu piece and coat it in the flour mixture as described above. For better texture, lightly spray the coated pieces with cooking oil before air frying.
  11. Arrange the tofu in the air fryer without overcrowding.
  12. Air fry for 12-15 minutes, flipping halfway through, until crispy and golden brown.
