Breakfast Ham & Cheese Butter Biscuits
When I was growing up my grandma was in love with KFCs biscuits, so, naturally, every time she visited us we used to take a little trip to our local KCF and endulge in mostly those flaky, butter biscuits. When I thought about veganizing them I wanted to add a couple of extra ingredients to make them even more delicious and filling.
These flaky, buttery, and cheesy biscuits are the perfect for early in the morning, to be a part of your next brunch, or by themselves with some vegan butter. The vegan ham gives them that extra crunch and saltiness that makes them just perfect! You will need a few ingredients that you probably have in your pantry such as flour, vegan butter, and non-dairy milk, as well as your choice of vegan cheese and ham.

- Preheat oven to 425F and line a baking pan with parchment paper. Set aside.
- Mix in the non-dairy milk and lemon juice, whisk and set aside to set.
- Combine flour, baking powder, sugar, parsley and salt in a large bowl and mix well.
- Grate the butter and mix into the flour mix, combine until you have a crumbly mixture.
- Add in the mix mixture and combine with a wooden spoon. Do not overmix.
- Add in the ham and cheese. Mix well together.
- Transfer the dough to a floured surface and work the dough, adding more flour if needed until the dough is manageable.
- Fold in half over itself and use your hands to gently flatten layers together. Rotate and fold in half again, repeat this process 4 to 6 times.
- Using your hands, roll the dough until this around 2 CM thick.
- Use a biscuit cutter (or a glass if you don't have one) and cut the biscuits form the dough.
- Get as many biscuits as you can, then gently fold the dough again, and cut more biscuits until you have 6.
- Bake for 12-15 minutes or until tops are slightly golden
- While they bake mix in the melted butter and parsley.
- Brush with melted salted butter immediately after removing from oven.
