- Preheat the oven to 425F.
- Prepare a baking pan, oiling it with butter. Melt the butter in a small sauce pan, add in the garlic and cook until it becomes fragrant.
- Add the Italian seasoning and chili flakes.
- Place one layers of potatoes in the baking pan, drizzle 1-2 tbsp. of the garlic butter on top, followed by 2-3 tbsp. of vegan mozzarella, topped with 2-3 tbsp. of vegan parmesan cheese. Repeat this process with the remaining ingredients. Saving 1/4 cup of parmesan cheese to top.
- Bake the potatoes for 30 minutes. Remove from the oven and using a potato masher press down on the potatoes carefully, without breaking them.
- Bake for an extra 30 minutes.
- Allow the potatoes to settle for 20 minutes before flipping them into a clean plate.
- Top with extra fresh vegan parmesan if desired. Enjoy!
