For the Gnocchi
  1. Boil the potatoes for 15 minutes or until they are soft.
  2. Once the potatoes cooled, mash them using a potato masher or a fork. Add in the flour and salt.
  3. Flour your hands, and start working the dough until its fully combined, you do not want the dough to be sticky so add in more flour if necessary.
  4. Once the dough is ready, roll the dough into a ball and cut it into 8 even pieces. Roll each piece into a long log, around 1.5 CM think. Cut the log into the gnocchi (around 2 CM long). Make sure you cover each piece with extra flour so they don't stick. Repeat this process with the remaining dough.
  5. In a large pot, boil 4-5 cups of water, add in salt, once the water is boiled cook the gnocchi until they float to the surface. Set aside immediately.
For the sauce
  1. While your pasta cooks, melt the butter in a medium size pan, add in the flour to make a thick roux.
  2. Immediately, add in 1 cup of milk and whisk until you have a smooth white sauce. Add the nutritional yeast, whisk until everything is incorporated. Add in the rest of the ingredients and whisk. Cook the sauce for 5-6 minutes in medium-low heat, while whisking constantly and adding in 1/4 cup of milk at the time.
  3. Cook the bacon strips and cut them in small pieces. Add them to the sauce, followed by the pasta water. Whisk until smooth.
  4. Add in the gnocchi and stir until they are completely covered.
  5. Serve hot, too with extra bacon bites and vegan parm if desired.
