Sweet Potato Gnocchi in Carbonara Sauce

For the Gnocchi
- Boil the potatoes for 15 minutes or until they are soft.
- Once the potatoes cooled, mash them using a potato masher or a fork. Add in the flour and salt.
- Flour your hands, and start working the dough until its fully combined, you do not want the dough to be sticky so add in more flour if necessary.
- Once the dough is ready, roll the dough into a ball and cut it into 8 even pieces. Roll each piece into a long log, around 1.5 CM think. Cut the log into the gnocchi (around 2 CM long). Make sure you cover each piece with extra flour so they don't stick. Repeat this process with the remaining dough.
- In a large pot, boil 4-5 cups of water, add in salt, once the water is boiled cook the gnocchi until they float to the surface. Set aside immediately.
For the sauce
- While your pasta cooks, melt the butter in a medium size pan, add in the flour to make a thick roux.
- Immediately, add in 1 cup of milk and whisk until you have a smooth white sauce. Add the nutritional yeast, whisk until everything is incorporated. Add in the rest of the ingredients and whisk. Cook the sauce for 5-6 minutes in medium-low heat, while whisking constantly and adding in 1/4 cup of milk at the time.
- Cook the bacon strips and cut them in small pieces. Add them to the sauce, followed by the pasta water. Whisk until smooth.
- Add in the gnocchi and stir until they are completely covered.
- Serve hot, too with extra bacon bites and vegan parm if desired.
