French Onion Gnocchi

 
 

Gnocchi were the first thing I learned how to make with my grandma. Every time she would come visit, it was a tradition to make Gnocchi a la Carbonara for dinner. After all these years, I have made gnocchi a thousand times (usually a la Carbonara, like grandma likes it!), but I have never made this exquisite French Onion gnocchi and my only regret is not making it sooner.

You can make the gnocchi from scratch (like I did) or get some from the store to make your life easier, but the sauce is the real MVP here. Imagine everything you love about a French onion soup, the coziness, cheesiness, and creaminess, but on top of soft gnocchi, it is delicious!

Ingredients

French Onion Sauce

Instructions

  1. Melt the butter in a large pot, once melted, add in the chopped white onions, followed by the olive oil, cook them in medium-high heat until they start to sweat (this takes around 5-10 minutes).
  2. Add in the soy sauce and maple syrup and stir, allow the onions to cook for an extra 5 minutes. Stir again and cook them until they are completely caramelized (they should look light brown). Add in the garlic and cook for 2 minutes.
  3. Add in 1 cup of the broth, milk and stir, followed by the nutritional yeast, stir until it is completely dissolved.
  4. Allow the mixture to cool before transferring to a high speed blender and blend with the remaining vegetable broth until smooth.
  5. Heat up 2 tbsp. of vegan butter on a large sauce pan.
  6. Cook the gnocchi in boiling water until the float, immediately transfer to the sauce pan with the heated up butter, stir and cook until they are golden brown and remove from the heat.
  7. Pour the gnocchi into the sauce and stir until tall the gnocchi are covered.
  8. Transfer the gnocchi to French onion ramekins in equal parts, making sure there is enough sauce on the top. Cover the top with vegan mozzarella cheese.
  9. Broil them to 500F for 5-10 minutes or until the cheese is completely melted and golden brown.
  10. Serve hot and enjoy!
