  1. Cook the gnocchi according to package directions, save 1/2 cup of pasta water. Set the gnocchi aside.
  2. Blend the rest of the ingredients on a high speed blender until you have a smooth sauce. Pour the sauce on the gnocchi & serve hot. Sprinkle some Vegan Parmesan on top if desire

Notes

Leftover sauce can be kept in the fridge for a week, or frozen for up to 6 months.
