- Preheat the oven to 350F.
- Add the vegan butter to the stand mixer bowl, followed by both sugars. Mix until everything is fully incorporated.
- Add in the vegan egg and Biscoff spread. Mix until everything is incorporated again.
- Sift flour, salt, baking powder, baking soda and cinnamon together, then add the mixture to the wet ingredients, remove from the stand mixer and fold the ingredients using a rubber spatula. Do not overmix.
- Add in the chocolate and Biscoff cookie chunks, fold with the spatula.
- Divide the dough into 12 equal parts. and place them in a baking tray, leaving enough space for them to spread while they bake.
- Bake the cookies for 10 minutes. Remove the cookies from the oven and place a half of the Biscoff cookie on top of it, pressing on the cookie slightly (and carefully).
- Bake the cookies for extra 5 minutes.
- Let the cookies rest for 15 minutes before serving.
